Rosemary and Thyme Marinade

Ingredients

  • ½ cs Thyme

  • ½ cs Rosemary

  • As needed Salt/Pepper

  • 4cups Olive Oil

  • ½ lb. Cilantro

Preparation

  1. Whisk ingredients in a bowl to make marinade.

  2. Marinate fish for 30 minutes.

  3. Grill sturgeon until the temperature inside the cavity measures 145 F.

  4. Remove the sturgeon from zone 2 to zone 3 and let it rest for a few minutes until temperature reaches 150 F.


Grilled Sturgeon Recipe

Ingredients

  • 9oz Lake Sturgeon

  • Salt and pepper (as needed)

  • 2oz Lemon juice

  • 5oz Arugula

  • 1each Lemon

  • 1each Coral Tuile

Preparation

  1. Clean the grill well before getting it hot, this will help ensure the fish will not stick while cooking. Start with a grill brush and remove any burnt-on material. 

  2. After words with an old towel that has been slightly oiled with plain vegetable oil rub the grill down. This is what chef’s call “seasoning the grill”.
    Take the sturgeon from the (marinade see recipe) and place the sturgeon on section 2 of the grill.

  3. In a small stainless-steel bowl add arugula lemon juice, olive oil, salt and pepper and toss for garnish. 

  4. Flip the fish after 4 minutes of cooking and cook another 4min*or until the fish reaches an internal cooking temperature of 150 degrees.

  5. Char lemon for garnish
